Classic French staples such as Coq au vin and French onion soup are given a fresh twist, ensuring that they appeal to contemporary tastes. Desserts, like the Gâteau Au Chocolat provide a delightful end to the meal.

High West Saloon

Founded in 2006 by David and Jane Perkins, High West Distillery has become a trailblazer in whiskey innovation. Inspired by parallels between biochemistry and distillation, David, a former biochemist, embarked on this venture after visiting a Kentucky distillery. The family moved to Park City, Utah in 2004, drawn by its rich Old West history and whiskey heritage. High West Distillery also holds the distinction as Utah’s first legal distillery since 1870. In 2009, they delighted whiskey and food lovers by opening the High West Saloon just off Main Street in Park City.

Chef Michael Showers revitalized High West’s eateries in 2018 with his creative flair and nearly 30 years of fine-dining expertise. Passionate about local ingredients, he designed a seasonal, farm-to-table menu that perfectly pairs with the distillery’s acclaimed whiskeys, enriching the guest dining experience.

This season, a delicious and recognizable dish is the Whiskey & Sweet Onion Gratinèe. This savory, hearty soup combines caramelized onions with the distillery’s signature Double Rye, resulting in a rich, complex flavor profile. Topped with melted aged Gruyère cheese and served piping hot, it is a comforting and satisfying dish that adds depth to the rest of the menu.

“Comfort food is a term that we love as it doesn’t just apply to big, robust, heavy foods but we believe and practice the application as our menus make people comfortable,” explains Chef Showers. “Many of our dishes re-appear seasonally as we do have a stable of dishes that are highly recognizable. We make everything our own at all High West locations, but there will be recognizable components to help guests feel more ‘comfortable’ when navigating our menus. The best example is our whiskey gratinée soup, which is our rendition of French onion. For years, we only had it on the menu in the winter as it’s very robust, but our guests started asking for it year-round, so when our clientele speaks, we listen, and now it’s an annual staple on our menu.”

It pairs great with its side of fingerling potatoes, which are braised in a lemon broth and seared in a balsamic reduction. It’s probably my favorite dish.”

In Summit County, where agriculture weaves through the fabric of daily life, 12-year-old Kenzie West stands among the emerging young farmers. Her latest endeavor, raising a baby lamb for the Junior Livestock Show, held annually during the Summit County Fair, began when the lamb was a month old.

The Junior Livestock Auction serves as the grand finale of a year dedicated to livestock management by the young residents of Summit County who select, care for, and meticulously groom their steers, lambs, or hogs in preparation for the fair. Each participant invests significant time and effort into their animal. The animals are rigorously judged at the fair, and only those meeting the highest standards are sold at the auction.

Kenzie had third choice when picking her lamb from a group and dedicated the next four months to nurturing and preparing it for competition. Her family, who already kept 12 chickens, had given Kenzie a foundation in animal care that she eagerly built upon for this new challenge. Kenzie stayed with her aunt Cathy during the summer to raise the lamb.

“My cousin raised a lamb last year, so I decided to do it this year,” said Kenzie. “It is called an ewe, and I named it Lamborghini. It was difficult. She was a little brat.”

Kenzie’s daily routine involved feeding, grooming and exercising the lamb. Perhaps most notably, she took to shearing the lamb herself and carefully splinting its legs every other day to build muscle.

“They were on a really strict diet, so I would have to take food away after a few hours,” Kenzie explained. “I had to wrap and condition her legs so the shag wouldn’t wear off, and she would have muscly legs. The best lamb can sell for the most money.”

The young farmer also spent considerable time teaching the lamb to stand tall, with a flat back and straight posture from its neck to its feet — essential skills for any livestock competition.

Kenzie’s father, Ron West, expressed pride in her daughter’s dedication and growth through the experience.

“The confidence we have seen in Kenzie, each time we saw her during this process, she was a lot more confident,” said Ron. “This has really helped her develop her own personality instead of being the little sister.

Lamborghini weighed 118 pounds and sold for $17.50 a pound. Jim Rees of 4B Construction purchased Kenzie’s lamb, but gave it back to Kenzie. Kenzie is considering gifting it to her grandfather, who raised cattle in Upton.

The Christian Center of Park City last month opened its fourth thrift store, Summit Exchange, at Outlets Park City.

“This is super exciting for us. We have wanted to get a store at the Outlets in Park City for a few years now,” said Jake Carter, the center’s marketing and grant manager. “We receive donations at the Christian Center Park City location (on Deer Valley Drive) and then take them over to the Summit Exchange, and everything is sold at a very discounted price.”

Summit Exchange offers a selection of new and gently used clothing, furniture, home goods and recreational gear. Every purchase at Summit Exchange supports the local community, funding Christian Center programs such as the food pantry and Operation Hope.

“Anyone is welcome anytime to come to our food pantry and gather any food they need,” Carter said.

The store’s inventory is entirely donation-based with donations accepted at both the Heber City and Park City locations. Items are sorted and then distributed to the resale stores, where they are upcycled to generate revenue for center’s community outreach programs. The aim is to not only provide affordable shopping options, but also foster a sense of higher purpose among shoppers.

Top 5 Donation Needs

Summit Exchange relies on the community’s generosity to stock its shelves and support its mission. Here are the top five categories of items that are currently needed:

  1. Food: Non-perishable food items such as canned goods, pasta, rice, and cereals are always in high demand. Donations help stock local food pantries and provide meals for families and individuals in need.
  2. Clothing and Shoes: Both adult and children’s clothing and shoes are essential. Items should be clean, free of stains, and without holes or tears. Seasonal clothing is particularly welcomed to help people stay warm during the winter and cool in the summer.
  3. Furniture: Gently used furniture pieces, including sofas, chairs, tables and beds, can make a significant difference for homes in transition. Donated furniture should be in good condition and free of major damage and odors.
  4. Household and Kitchen Items: Essentials such as pots, pans, dishes, and small appliances help families establish and maintain their households. These items should be functional and in good working order.
  5. Recreation and Sport Equipment: Items like bikes, skis, snowboards and camping gear are especially appreciated, reflecting the active lifestyle of the Park City community. These donations allow others to enjoy recreational activities at an affordable cost.

To ensure the highest quality of donations, Summit Exchange requests that all items be in good condition. This means no stains, tears, rips, or broken parts. Clothing should be clean, free from soil or moisture, and should be packed in bags or boxes.

Training is offered in archery, indoor climbing, cycling, mountain biking, equestrian activities, paddle sports, challenge courses, and day camps during summer. During the summer months, historic Main Street transforms into a lively outdoor dining scene, thanks to the city’s innovative approach to al fresco dining which began in 2011.
Recognizing the potential to infuse activity into the downtown area during the warmer months, Park City officials implemented a special provision within the city code, allowing for up to 12 al fresco dining decks placed along Main Street. The initiative has been embraced by both restaurant owners and patrons.
“Due to its historic nature, Main Street had unique challenges, including a narrow sidewalk and street. These areas are owned and maintained by the City,” explains Jenny Diersen, economic development program manager, Park City. “The City Council elected to implement a series of programs to help increase vibrancy on Main Street, and the Dining Deck program was born. There have been 9 participants each year. The Dining Deck program provides additional economic benefits (sales tax) to Park City, helps create additional jobs, and provides a unique setting for Park City locals and visitors alike.”
These outdoor dining spaces do more than just add tables outside; they enhance the overall ambiance of Park City’s historic center. Each deck extends the restaurant it belongs to, allowing for a seamless flow from indoor to outdoor spaces. Each restaurant’s liquor license also includes its al fresco dining deck (and rooftop dining decks) thanks to a contractual agreement with the city.

Dog-friendly with enough space for 40 people; patio season is always a joy here. Established in 1986, this historic spot has an impressive selection of in-house craft beers, winning numerous accolades for the brewery.
